Trying To Bake Gluten Free For My Son W/Celiacs. Any Recommendations?

Choosing a gluten-free flour or blend depends on the product you are making. Not all flours yield the same results, as they all have starkly different consistencies. For instance, you wouldn't use the same blend for cookies as you would for a cupcake. That being said, the single best, most versatile pre-made flour blend is Bob's Red Mill 1 to 1. It's in a clear bag with a light blue label. And it is truly "all-purpose."

King Arthur and Cup4Cup both have great gluten free flours that can be swamped for regular flour in most recipes. You may need to add Xanthan Gum to the recipe to bind the ingredients as some gluten-free flour don't bind or thicken as well as wheat flours do. However, it is not required. I choose to make the majority of my baked goods without Xanthan Gum. I hope this helps and good luck!

Try www.glutenfreeeasily.com or www.glutenfreeonashoestring.com for recipes. My Celiac son loves the banana bread I make using Pamela's Baking Mix, recipe on the bag. The best flour replacement I have ever used is Better Batter. Every Christmas we have Yorkshire Pudding and you cannot tell it is GF. I would also recommend trying to find a ROCK group (raising our Celiac Kids) and finding a GF camp. My son is very active with Camp Weekaneatit came outside of Atlanta
