What Is Your Favorite Healthy Soup Recipe?

I roast a whole, free-range, antibiotic free chicken in the oven. Then, I use the leftover bones to make broth the next day. Broth is then used to make chicken soup with assorted vegetables, or used in any recipe that calls for chicken broth.

I make my vegetable broth from scratch and then add either lentils or a 10 bean mix along with carrots, celery, mushrooms, fire roasted tomatoes and Hatch green chiles. Delicious, hearty and healthy.

I have been preparing bone broth in a crock pot for years. It takes 24 to 48 hours. I just recently purchase a instant pot...wow...it's amazing, bone broth in 2 to 4 hours. I use my bone broth in everything.

As a pescatarian, I'm a fan of mushroom stock and veg stock for lentil soup with lots of sautéed leak,garlic,diced carrot,butternut squash,mushrooms and handfuls or baby spinach and or Swiss chard. I like it to be not too thin not too thick. I call it a stoup. Yum
