Butter, coconut oil, red palm oil, lard, tallow, avocado oil, macadamia nut oil. The more saturated it is the better. Saturated fats are resistant to oxidation and therefore you'll be less likely to eat oxidized fats. Oxidized fats are what end up in your arteries.

Yes I agree Coconut oil or avocado oil for high temperatures because the molecular structure does not change in high heat. Olive oil is excellent for you but has more nutritional properties uncooked.

Yea I agree with Steph she hit on the money - coconut is best for cooking. Olive oil for salads with vinegar

I use avocado oil for cooking. It doesn't interfere with the flavor of the food and is good for higher temps. Coconut oil is good for some things but will smoke at higher temps.

Saturated fats may be getting a good reputation again but they can still be high risk. Safest oils are monounsaturated fats (olive oils, canola) or polyunsaturated (grapeseed, walnut, sesame)
